Simply Tasty: Goat Cheese Pasta

I have an odd obsession with goat cheese. I don’t need it everyday but once in awhile, the irresistible urge to eat it will overcome me and I’ll come home with 10 oz of goat cheese with crackers. Anyhoot, if you love goat cheese like me (and avocados and asparagus), this recipe will rock your world! Loving lately: Goat Cheese Pasta!

Recipe adapted from Smitten Kitchen.

  • 1 bag of rotini pasta
  • 1 pound of asparagus (1 bunch)
  • 5 oz of goat cheese
  • 1/4 cup olive oil
  • 1 lemon
  • 2 avocados
  • Salt and Pepper
  1. Boil pasta.
  2. Cut asparagus into 1 inch pieces.
  3. While pasta is boiling, put goat cheese in a large bowl.
  4. Add olive oil and 1 tablespoon grated lemon to goat cheese. Set aside.
  5. 2 minutes before pasta is fully boiled, add asparagus.
  6. Cut avocados into 1 inch cubes.
  7. Drain pasta and asparagus and while still warm, toss with goat cheese mixture.
  8. Add salt, pepper and fresh lemon juice as needed. Lastly, add avocados.
  9. Enjoy!

This recipe is so simple and makes so much pasta, perfect for dinner and 2 days worth of lunch! For the working gal like me, that’s two thumbs up. {This is a pretty goat cheese friendly recipe so keep that in mind if you aren’t really fond of it.}

Simply Traveling: Santa Monica

Happy Thursday everyone!

On our recent trip down south, we stayed with a good friend of ours that lives in Brentwood, close to the Santa Monica pier. He was such a gracious host and he definitely made sure we had a great time. We ate A LOT… I’ll just let the picture speak for themselves.

Santa Monica Restaurants:

800 degrees – Like a Chipotle for pizza, you go down a line and create your own. AMAZING. Highly recommend the pesto sauce!

Diddy Riese -Cheapest ice cream cookie sandwich ever!

The Misfit – AMAZING Ahi Tuna and the best sea salt chocolate chip cookie I’ve ever had. They also do an endless mimosa brunch I’m definitely returning for!

Although I wish maybe I would’ve thrown in a morning jog or two, I don’t regret any of the deliciousness posted above! Food is a big part of my life and I won’t apologize for that. But I can only eat like that on vacations, eating such AMAZING food daily would not only hurt my fitness journey but my Rob’s wallet too, eek!

I have NEVER had an Ahi Tuna Burger and I think my life was changed FOR-EH-VER. Do you have any recommendations of places where you love their ahi tuna burger??

In between all the food might’ve been a drink or two too. Let’s just say 32 oz Cabo Cantina Margarita vs. Evani: Margarita-1 Evani-0. (32 oz is A LOT people. Trust me on this. Haha)

What are your favorite spots in Santa Monica? Have you ever been? If you haven’t, I highly recommend it!

Good Eats: Paesano’s Happy Hour

Happy Sunday loves!

How do you feel about weekend entries? I was really happy with the response last week so I’m going to try my best to keep up with them. 🙂

So technically the Good Eats feature falls under Simply Traveling but I figure it couldn’t hurt to share local eats and I hope you don’t mind! I’ve been on this push for Happy Hours and good times with friends so I wanted to share a new favorite: Paesano’s Happy Hour in Midtown Sacramento (similar to other Paesano’s happy hours nationwide)

My personal favorite without a doubt was the Fried Ravioli. Maybe it’s because I have a penchant for fried objects or because I love ravioli. Either way, it’s a MEGA win. Also, the Polenta Fries are a must! Their sangria pitchers are yummy and super affordable too. I’ve been feeling like quite a wino lately, I’m finally starting to acquire a taste for it.

Do you have any happy hours you love? Maybe if it’s a franchise, there might be one near me too!
